Since Utah doesn't release much in terms of injury reports, all of this is pure speculation.

Huntley:
Mechanism - Huntley gets tackled from behind and driven into the ground with his right shoulder
Most likely injury - AC joint separation AKA Shoulder Separation
What is that? - Your collarbone (clavicle) joins your scapula (shoulder blade) at an area called the acromion. AC stands for Acromioclavicular. You have ligaments that hold that joint together. You can stretch them, partially tear them, or completely tear them.
Recovery
- Best case - Grade 1 sprain - 1-2 weeks
- Grade 2 can be out 3-4 weeks, Grade 3 6-12 weeks, and anything beyond this is surgical and 4-6 months
- It should be noted that it's his throwing shoulder, so it will probably be at the longer end of recovery times depending on the grade

Fitts:
Mechanism - Fitts gets his left ankle rolled up on by an offensive lineman. His foot is forced into external rotation while planted with all of that weight coming down on it.
Most likely injury - High ankle sprain
What is that? - This is an injury to the ligaments that hold the tibia and fibula together (the bones that go from your knee to your ankle).
Recovery - The high ankle sprain is dreaded because it takes twice as long to recover than a severe ankle sprain involving the lateral ligaments. And they are very hard to predict. Some people are back in a couple of weeks and some take months. Serious injuries do sometimes require surgery. They often have to perform X-Rays with stress on the joint just to see how stable the injury is.

Did Anae ever get back in the game? I didn't see what happened to him. Remember that all of the above is just guesswork. For all I know, Huntley strained a pec and Fitts has a lower ankle sprain or fibula fracture. This is just sort of for fun.
