I might be grasping for straws with my following point but Utah is not the first P5 team to struggle against NIU. In recent years, NIU has beaten Iowa, Nebraska, and Northwestern.
In 2015, number 1 Ohio State beat NIU at home 20-13. In the 3rd quarter, OSU returned an interception for a TD. OSU scored 1 touchdown against NIU (OSU total yards 298). OSU finished 12-1 in 2015. This is the OSU team that had Elliot, Miller, Barrett, and C. Jones.
My point is that just because Utah struggled against NIU that doesn’t mean they’re going to be bad this year. After the UW game, we will know more about this team.
